Consistency problems are usually a quick fix once you know what's driving them.

Too soft / runny

  • Turn the hardness up a notch and let it re-freeze.
  • Check you're not over-serving in the heat — the machine needs recovery time.
  • Make sure the condenser is clean and airflow isn't blocked.
  • Check the mix ratio — too much water in a powder mix makes soft, icy product.

Too hard / stiff

  • Turn the hardness down slightly.
  • Very cold ambient or a machine left idle can over-freeze — draw a little product through.

Grainy or icy

  • Usually mix ratio or old mix — follow the mix instructions and rotate stock.
  • Worn scraper blades cause ice crystals — replace them.

Consistency that drifts all day

That's often overrun or recovery — a sign the machine is working too hard for your volume, or is due a service.
